Copycat KFC Coleslaw Recipe

This copycat recipe is so good, you might even start making it instead of the original. You know it is that much fresher because you make it with your own two hands!

Coleslaw actually goes great with all sorts of things, not just fried chicken. Try it on pulled pork, or even to switch up the classic roast beef and cheddar sandwich. Either way it will be delicious.

Start with a medium cabbage, removing the outer leaves and the core before chopping it up into thin slices. This is much easier with a food processor, so keep that in mind if you have one sitting around.  Just pulse it a few times, because you are trying to make cabbage slices, not cabbage puree.

Repeat the process with some carrots, making sure it maintains the same constancy. For the sauce, you need

  • half a cup of mayo
  • a third of a cup of sugar
  • half a teaspoon of salt
  • a bit of black pepper
  • quarter of a cup of milk
  • a quarter of a cup of buttermilk
  • two tablespoons of finely-chopped onion
  • one and a half teaspoons of vinegar
  • one and a half tablespoons of lemon juice

Mix all those ingredients up until it is nice and incorporated. Use a whisk to speed up the process and add the mixture to the cabbage and carrot mixture.
